Today’s recipe is a Eggplant Loaf. When I first saw this recipe, I wanted to try it right away. One of the main ingredients is ground beef but I decided to make my eggplant loaf without any ground beef. So here we go!
1/2 medium onion diced
1/2 sweet pepper diced
dried basil leaves
3-4 garlic minced
Peel the eggplant. Put the skin of the eggplant in a baking tray, sprinkle with a little oil and place in oven (set at 350 degrees) for about 4-5 minutes.
Cut up the eggplant into squares. Place a sauce pan on the stove to hot. Add 1 tablespoon canola oil, add the garlic and onion and sweet peppers. Allow the vegetables to sauté for about 2 minutes. Add the cut up eggplant, salt, black pepper and dried basil leaves. Mix in everything together. Add 1 1/2 cups of water, cover the pot and allow the eggplant to cook well. You will notice that the mass of the eggplant will reduce to about half when it is fully cooked.
After about 5 minutes remove skin of the eggplant from the oven. They should be limber now. Allow to cool.
After about 25 minutes the eggplant should be cooked. Taste and add more salt if needed. If all the water has dried down, turn off the stove and allow the eggplant to cool. In a mixing bowl crack open the two eggs and whisk them together.
Add the eggs to the eggplant when it is cool. Mix in well. Lightly grease a bread pan. Line with the skin of the eggplant. Fill with the eggplant mixture. Fold over the skin of the eggplant to cover the eggplant mixture. Watch video below for clarification. Place the bread ban in the oven (set at 350 degrees) and allow the eggplant loaf to bake for 1 hour.
After one hour, remove the eggplant loaf from the oven, allow to cool. Slice and serve!
I promoted this recipe as 100% vegetarian and I got a few questions asking as one of the ingredients is eggs if this recipe will still fall in the category of vegetarian. Vegetarians eat eggs, cheese and drink milk. Vegans don’t. As we are on the topic of eggs. when I first tried this recipe, I did not add the eggs and the loaf was mushy and did not hold the form of the bread pan. So when I made it again, I decided that the eggs must be added.
