Black Bean Stew

Black Bean Stew with a little twist of colour! I only recently started cooking black beans, they are not bad at all. Just to give myself a variety, I cook these beans sometimes.

Ingredients
2 cans of black beans
1 large yellow sweet pepper
1 red sliced onion

Method
I like to roast my sweet pepper first. Cut the sweet pepper in half, cut out the seeds and cut each half into halfs. Place the cut sweet pepper in the tray (line with a sheet of foil) of your toaster oven, sprinkle with a bit of olive oil, salt and black pepper. If you don't have toaster oven, you can roast the sweet pepper in the oven.

When they are fully cooked, remove the sweet pepper from the toaster oven or oven. Put your sauce pan on the stove and allow the pot to hot. Pour one table spoon of olive oil and add the onions. Allow the onions to saute for two minutes. Add the 2 cans of black beans into a pot, roasted yellow sweet pepper, salt and black pepper and allow the beans to cook for 10 minutes.

Done!! I really think that roasting the sweet peppers actually bring out the sweetness of the vegetables. I like the flavor that I get when I toast them. You can also roast onions and garlic in this fashion as well.
