Veggie n Cheese
My daughter sent me this recipe where the main ingredient is Eggplant aka Melonge. Of course I was a little creative with it.
We both enjoy a Melonge cassarole where you bake layers of the melonge and minced meat. One time I cooked the melonge first by
dipping each slice in egg and frying them. I then put a layer of the fried melonge in a baking dish, a layer of cooked minced meat and a
layer of cheese. I repeated that step until the dish was full.
The problem though was after the cassarole was baked, there was a lot of oil and I absolutely did not like that. It was a turn off.
With this new recipe, I can elimate of all that and it is easier to prepare.
Ingredients
1 eggplant diced
1 sweet pepper cut up into large squares
1 tomato cut up into large squares
Method
Put all the vegetables in the tray of the toaster oven. Add some salt and garlic powder (grated garlic would be better) and sprinkle with a
bit of olive oil.
Allow the vegetables to roast in the toaster oven. This can be done in your stove oven as well. When all the vegetables are well roasted,
transfer them to a baking dish and sprinkle some cheese. Put the dish in the stove oven for a few minutes and let the cheese melt.
It is that simple. You can eat Veggie and Cheese alone (which I did) or it can be eaten as a side dish. You can be real creative.
Veggie and Cheese is the way to go!!!!
