Stuffing
Stuffing is a side dish that is served with many local meals in the BVI.
One day I decided to make this dish at home because it looked pretty easy, I tried Candy Yams because it had a orange look to it but I did
not get the texture I was looking for. Next I tried Sweet Potato (Ground Provision) and added sazon. It just was
not right.
Sazon is a seasoning and a colouring so if I add it to my rice for example, it would give the rice flavour as well as a nice orange or yellow
colour. It can also be used to season your meats.
Ingredients
1 pack of instant potatoes
1 cup raisins
1 pack sazon
2 cups milk
2 tablespons of butter
One day I went to a restaurant and decided to ask one of the workers there how this Stuffing is made and she said simply, "Instant Mash Potato".
I had a good laugh because it is quite simple.
Method
Using the measurements from the instructions on the box of potato, put the water to boil and add the raisins and sazon.
Gradually add the instand mashed potato while mixing with a spoon. Eventually you should have a pot of nice creamy instant mashed potatoes.
