Pumpkin Stew

I cook alot of my trini meals with pumpkin, it cooks quickly. This Pumpkin Stew reicpe is quite nice not to mention healthy AND of course it does not take long to prepare.

Ingredients
1 medium size pumpkin
1 chopped onion
1 tablespoon brown sugar
1 tablespoon olive oil
salt
black pepper
pepper sauce (optional)
2 chopped garlic cloves

Method
Cut up the pumpkin into smaller pieces. Put your sauce pan on the fire and allow the pot to hot. Add the olive oil and chopped onion and garlic.

Allow the onion and garlic to saute for 2 minutes Add the pumpkin, salt, black pepper, brown sugar and pepper sauce. Allow the pumpkin to absorb the flavors of the onion and garlic. Add about 1/2 cup of water, and allow the pumpkin to cook. The pumpkin will eventually begin to soften and to break up. You can also use a fork to mash up the pumpkin into even smaller pieces. When the sauce is nice, smooth and thick turn off the stove.
