Stewed Fried Fish
A few days ago I prepared Stewed Fried Fish and
served it with Coo Coo aka Funji
for myself and Corn Meal
Dumplings (scroll down to the bottom of the page for the
instructions) for my husband. He does not like the Coo Coo. He really
enjoyed the fish, he said that he likes the fish prepared that way.
I cooked Snapper fish, it was a first time. I like
the fact that each piece of fish fillet was individually wrapped and
there were no bones.
As I try to avoid fried foods as much as possible,
I would simply stew the fish without frying first. Of course it would
take less time to prepare.
Ingredients
4 snapper fillet (you can use any fish you like)
one sliced tomato
one sliced onion
flour
olive oil
Method
Put the fish in a large bowl of water and squeeze half a lime or lemon
into the water. This is to eliminate the fresh scent of the fish. Allow
the fish to soak in the lemon/lime water for a few minutes. Then
through out the water. Season the fish with Blended Herbs.
In a plate, put some flour - about half cup, coat
each piece of fish in the flour. Ensure that the pieces of fish are
well coated on both sides. While that is being done, put a frying pan
on the stove to hot. Coat the bottom of the pot with olive oil. When
the oil is hot, add the fish.
Allow the fish to cook - each side of the fish to
get golden brown. Remove from the frying pan and put in a plate. After
all the fried fish has cooked and removed from the frying pan, add the
sliced onion and tomato to saute. Add half cup of water and allow the
vegetables to cook. The tomatoes will begin to soften and release its
juices - thicken the sauce. You can add two tablespoons of butter at
this point. Season with salt and black pepper. Add the fried fish to
the sauce and let the fish aborb the flavours of the sauce for a few
minutes. That is it! Turn off the stove.
This dish would also go great with some Ground Provision.
