As a young child and even as a young adult, I never really liked spinach. It is only a fews years ago I went to a Thanksgiving Party at a friends home and they prepared this salad with feta cheese, red onions and some green bush. The salad was great and I enquired what the green bush was and they informed me that it was Baby Spinach. The name of the salad was Spinach Salad. I now make this salad at home and my family enjoys it. I eventualy came up with the idea to create this dish - Spinach Rice. It is quite simple and of course nutritious. Ingredients
2 cups rice 2 cups baby spinach 1 diced medium onion 3 cups chick/veggie stock Method

Method
Shred the saltfish into small pieces. Allow the onions to saute for a few minutes, add the spinach, saltfish, some pepper sauce and let these ingredients saute for about five minutes. Gradually mix in the cooked rice and mix everything together. That is it. Yum!!! Saltfish Spinach Rice will go great with Fried Plantain.
