My husband loves shrimp so I came up with this innovative way to prepare it – Shrimp Fried Rice. I like cooking shrimp because it is fast and easy. My son would be returning from a one week charter, today (10th June 2009) and I wanted to surprise him with a delicious meal. So I came up with this menu Shrimp Fried Rice and Fried Plantain. This dish is very easy to do. I cooked it this morning and I still had enough time to develop this page and prepare for work.
finely diced green sweet pepper
1 finely chopped carrot
2 cups rice
1 pack of sazon
Put the rice to boil in your regular fashion. When it is almost cooked, turn of the stove and drain out the water in a rice drainer. Put a deep pot (I like to use a iron pot because they are very durable) on the stove, allow it to hot. Add a tablespoon of olive oil, carrot, sweet pepper and sazon. Mix together and allow to saute for a few minutes.
Add the rice and mix thoroughly, ensure the colouring from the sazon is mixed in well with all the rice. Remember not to any more salt because the sazon has it own flavor. Add the shrimp and mixed it in with the rice. Cover the pot and lower the fire under the pot to its lowest. This is to allow the shrimp to cook but not over cook. After about fifteen minutes turn off the stove. Serve with Fried Plantain.
