This recipe is from my mother. She said my grandmother would make this with left over fried shark. She would mince the left over fried shark to make this. Some quantity are not listed as it depends on the amount you want to cook.

Fried Shark or King Fish (Minced)
Boiled Potatoes
marsh green seasoning
Juice of one lime
Juice of one-half lemon

1 clove garlic minced
Salt and Black Pepper to taste
1/2 cup bread crumbs
2 eggs
Sprig of fresh thyme
Scotch Bonnet Pepper, according to taste
Cayenne pepper to taste, optional
Vegetable oil for frying

Mix all ingredients well, and let sit in the refrigerator for 1 hour. You may also season with a dash of cayenne pepper, if desired.

Form into balls. Heat olive oil in a cast iron skillet, and fry until both sides are brown. I use a little of the left over shredded fried shark pieces to make a lime red sauce with onions slices which is one can of tomato sauce, one slice onions, green seasonings, lime juice and thyme.
