Before I migrated to the BVI, every year on Carnival Tuesday, in Trinidad and Tobago, my mother would prepare this dish for us. And boy did we enjoy it, especially after returning home from enjoying the parade of bands in town (Port of Spain - capital of Trinidad).

Ingredients
1 can of pigeon peas
1 can of coconut milk
dumplings
ground provision of your choice
1 sliced onion
2 chopped garlic cloves
Method

Firstly make your dumplings following these instructions. You can use any ground provision of your choice. Peel and wash the provision, then cut into small pieces.

In a large deep pot, add 4 cups of water and the can of coconut milk. Put the pot on the stove for the coconut milk/water to boil.

Sancoche

Add the provision and can of pigeon peas. Season with some blended herbs, salt and pepper. Add the onion and garlic. When the provision is almost cook, roll the dumplings into small balls and put into the pot.

After the sauce has thicken a bit and the provision is well cooked, turn off your stove

As you will notice in the picture below, I used red beans instead pigeon peas. It was just what I felt like eating that day. Looks good eh??? mmmmmmm!!!
