Saltfish Stew


I got this Saltfish Stew recipe from my Vincentian husband, it is quite simple and tasty. Today (10th May 2009) is Mother's Day and I am preparng this meal.

1 diced green sweet pepper
2 diced onions
2 tablespoon ketchup
2 table spoon olive oil

Saltfish is very salty so it has to be boiled a few times to remove the majority of the salt. What some peole do is to put the saltfish to soak the night before or what I do is boil the saltfish for about 10 minutes, through out the water and boil it again with a fresh pot of water. I repeat this three times. After this process is completed, shred the saltfish.

If the Saltfish is not boneless, remove the bone. Put a pot on the fire to hot, add two tablespoon of olive oil and add the onion and sweet peppers allow the vegetables to saute for few minutes. Add the ketchup and the shredded saltfish, mix well. Let that simmer for a few minutes. That is it.

Normally this is served with any Ground Provision of your choice but I am serving it, today, with Coconut Dumplings.
