Rum Punch

Rum Punch is another Trini homemade alcoholic beverage that my mom would make during the Christmas Holidays.  So the bottom line is we would have quite a few home made beverages to offer to our friends when they visit us for the Christmas Holidays.  Rum Punch is also commercially but there is nothing better than homemade Rum Punch - you can make it to your own liking.

Ingredients
4 cups water
2 cups caster sugar
1 cup lime juice
3 cups dark rum
10 shakes angostura bitters
1 cup crushed ice
nutmeg, to sprinkle
cherry

Method
To make sugar syrup, pour the water in a medium saucepan, add the sugar. Stir over a low heat until sugar dissolves, bring the liquid to a boil. The liquid would have now thicken and look like a syrup.

Remove the sauce pan with the syrup from heat and pour into a jug.  Allow the syrup to cool.  Place the jug with the syrup in the fridge and allow to chill. 

Remove the chilled syrup from the refrigerator and add dark rum, lime juice (must be freshly squeezed and bitters.  Stir well.  

When we first started making Rum Punch, we used Fernandes Black Label rum (manufactured in Trinidad) but I think they stop manufacturing Fernandes Black Label rum so we use Barcadi Gold. The white rum just does not taste right.

Pour into chilled glasses with crushed ice and sprinkle with nutmeg. I like to pop a cherry into my Rum Punch, it makes it fun to drink and try to get the cherry out of the glass when the drink is finished.
