Roasted Ochro

In my quest to find a different way to prepare ochro, I found this Roasted Ochro recipe.  It is quite simple and easy to do.  The only mistake I made is that I did not cut off the stems of the ochros and there were difficult to chew.  So when I did my next batch of roasted ochro, I cut off the stem of the ochros.

My neighbour has quite a few ochro trees in her yard and the trees have been bearing all at once so my neighbour has been giving me fresh ochro almost every morning.

The only way I know how to prepare ochro alone, without adding it as an ingredient to create another dish, is boiling the ochro. The dishes I make with ochro are Callaloo, Coo Coo and Cookup.

So on my search for ochro recipes I found Fried Ochro and Roasted Ochro. As I am trying to avoid fried foods, I opted out the Fried Ochro. Roasted Ochro seem interesting and of course simple.

Ingredients
1 dozen ochros
salt
black pepper
olive oil

Method
Clean the ochros and cut off as much of the stem as possible.  Do not cut off the top of the ochros.  Cutting off the top of the ochros will expose the slime.

Sprinkle the ochros with salt, black pepper and olive oil.  Mix well.  Place the seasoned ochros in a baking tray.  Put on the oven and allow it to hot.  Place the baking tray with the season ochros into the oven.  Allow the ochros to roast for about 20 minutes.

Roasted Ochro is a simple and different way to prepare ochros.  It is also a great recipe to add to your list of weight loss recipes.  Ochros are low in calories.
