Potato Choka

This is another dish that I remember my mother making when I was a young child. I think she has stopped making because of the saltiness of the saltfish it is not too good for her high blood pressure problem. She enjoys this dish a great deal.

I asked my son to get some pictures for me, of this dish and my mother prepared it for him. He too enjoyed it alot!

Ingredients
Saltfish
2 large potato
1 medium onion
garlic
1/4 cup of olive oil
1/2 teaspoon of black pepper

Method
Peel the potatoes and place in a pot of water and allow the water to boil and the potato to cook. Once the potatoes are cooked, turn off the stove, remove the potatoes from the pot and place them in a dish. Allow the potatoes to cool. After they are cool, cut them into small cubes.

Saltfish can be very salty so what I do to remove as much salt as I can, is to put the saltfish in a pot of water and allow the water to boil. When the water has come to a boil, throw out the water and add a fresh set of cold water to the pot. Allow this water to boil and repeat the first step about four to five times.

When the saltfish has been desalted, shred the saltfish and remove the bones if you are not using boneless saltfish. Add the shredded saltfish to the cubed potatoes. Dice the onion and grate one large garlic clove. Add diced onion, grated garlic and black pepper to the bowl with the saltfish and potatoes.

In a small pot, heat the olive oil and add three garlic cloves. Let the garlic fry until dark brown. Add the hot oil to the potato and mix all the ingredients together.
