Oildown
The only way I knew how to cook breadfruit was in
this style Oildown. We would put the breadfruit to
boil with coconut milk and maybe some pigtail if you are not
vegetarian.
Ingredients
pig tail
1 breadfruit
1 can coconut milk
1 sliced onion
2 garlic cloves grated
1 hot pepper
shadon bennie
chive
Method
Normally when I purchase the pigtail, it is already cut into nice small
pieces. It is normally salted as a preservative method
so be careful that your meal is not too salty. Put the pigtail in a
pressure pot with about 4 cups of water and allow the meat to
tenderize, after about 25 minutes, it should be good. Though out the
water and put the pigtail aside.
Cut the breadfruit in half and then cut each half
into half. Now peel off the skin. This is how I do it, it is much
easier for me to handle. In a deep pot throw in the coconut milk, about 4 cups
of water, pepper sauce, grated garlic, sliced onions and some blended herbs. Add the
tenderize pigtail. Note: do not add any salt at
this point, remember the pigtail is salted
Put the pot with pigtail and other ingredients on
the stove and allow them to simmer for a few minutes. Add the sliced
breadfruit, after about
20 minutes it should be cooked. Taste and add salt if required. Check
