I had a craving for something sweet and decided to make a cake but then when I checked my pantry, I realized that I did not have any butter. So I found a recipe for a chocolate cake that that does not require any butter, eggs or a mixer. Since this recipe does not require any butter, we will have to use some sort of fat so we will be using Canola oil. This cake falls in the category of vegan and vegetarian. I am neither vegan or vegetarian but I do enjoy a dish that keeps me on the healthy eating path!
1 1/2 cups flour
1/2 cup cocoa powder
1 cup granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon almond essence
2 teaspoon white vinegar
1 cup warm water
1 cup canola oil
In a mixing bowl, add the cocoa powder, warm water and almond essence. Mix these ingredients together well and set aside. Next, in another mixing bowl add the dry ingredients – add the flour, baking soda, salt and sugar. Mix these ingredients together.
Separate the mixture of the dry ingredients by making a hole in the center. Pour in the cocoa mixture and pour in the oil, vinegar and gently mix in the flour mixture with the cocoa mixture until everything is completely mixed and you have a nice smooth batter.
You will notice in the video below, I used baking powder instead of baking soda in error. The recipe really calls for baking soda and the white vinegar is used to assist the baking soda to make the cake rise.
Use a small bit of the canola oil to grease the baking dish. Sprinkle a small bit of the cocoa butter (instead of flour) around the inside of the baking dish. Pour in the cake mixture into the baking dish. Set oven to 350 degrees. Bake for about 45 minutes.
