METTEM OR METTAGEE

INGREDIENTS
12oz mixed meat(beef etc)
Fresh fish or saltfish, about 1lb
1 dry coconut
3lbs root vegetables
Onions, whole or cut in rings
Pumpkin or ochroes
Dumplings (recipe provided)
METHOD
Cover mixed meat with water and pressure until soft. Put saltedfish to soak in water. If fresh fish is used this may be fried or placed on top of vegetables about 10 minutes before the end.
Grate coconut, pour over 1 pint of water. Squeeze well and strain. Pour liquid over mixed meat.
Peel root vegetables. Add to mixed meat to cook in coconut milk and cook until almost tender.
Put saltfish with skin and bones removed, fresh or fried fish on top of vegetables. Add onions, pumpkin and ochroes.
Cook until coconut is almost absorbed.
Dumplings should be added about 8 minutes before the vegetables are ready. Do not open pot until Dumplings are well risen. Serves 6
DUMPLINGS
INGREDIENTS
4oz flour or 3oz flour and 1oz cornflour
1tsp baking powder
1½ oz margarine
1/8 tsp salt
1oz sugar
Grated nutmeg
3-4tsp milk or water
METHOD
Sift flour and baking powder, rub in margarine, and add salt, sugar and nutmeg.
Mix with enough milk or water to make stiff dough. Knead lightly and form into balls.
Place on top of vegetables and cook for about 8 minutes. Don not overcook.
NOTE: Chopped eschallot or chopped herbs may also be used.
