Daily Meal Ideas

Some of these meal ideas do not take very long to prepare so if you are in a position to cook before you go to work, you can choose some of these meals. Some are more time consuming e.g. macarconi pie. Therefore I recommend that any meal with this recipe be cooked on the day you do not have to go to work.

Another alternative is to prepare your meals the night before you go to work. You can even have it for dinner and pack some for your lunch the next day. This idea can only work if there is a refridgerator and microwave at your work place.

Why a refridgerator? Well remember the meal was cooked the night before so leaving your container with your lunch at room temperature will spoil the food by the time you are ready to eat.

Why microwave? Now that you have put your container with your homemade lunch, into the refridgerator at your work place, it would be too cold to eat, so all you have to do now is to pop it into the microwave and presto - you have a nice hot meal for lunch! Every Friday evenings my friends and I would get together for a few beverages and the pub that we would normally 'hang out' served grilled fish and I enjoyed it tremendously.

As I don't have a grill, I bake my fish in the oven.

For my husband 40th birthday, we invited a few friends to our home and I served this dish. It was a winner with our guests!!

Baked Fish

Stewed Veggie Patties
Mashed Potatoes
Steamed Broccoli

This dish is quite simple to prepare and not to mention - delicious! It can be eaten for breakfast, as a light lunch or a light dinner - whatever your fancy! Enjoy!!

Avacado Choka

This meal would fall in the category of a vegetarian meal and a well balanced meal. You have the bean (staples), potato (carbohydrates), string beans (vegetables).

Sweet Potato Pie
Black Bean Stew
String Beans with Bacon Bits

This meal was introduced to me by my husband a few years ago. My entire family enjoys it and it is what we call a one pot meal.

Oh! I forgot to mention - it does not take long to cook!

Ital Peas & Rice

This meal is a hot seller for food venders at Carnival fetes aka parties in Trinidad and Tobago, West Indies

Split Peas soup with corn

One day I did not know what to cook. Eventually, I came with the idea to prepare this meal. My son enjoyed it tremendously and even gave me a thumbs up!!

Curried Coconut Shrimp
Dumplings

On my daughter's return from her trip to Trinidad & Tobago in 2008, I prepared her favorite meal. She just enjoys this!!

Smoked Herring
Dhal
Serve with your favorite rice

One evening when I came home, my husband had already cooked and he does not cook regular. He prepared this meal and it was just delicious!

Callaloo Soup

Curried Chicken
Pumpkin Stew
