Macaroni Pie
As a young girl my mom taught me prepare this
dish, Macaroni Pie aka Macaroni and Cheese, using
one method and as a young mother, I learned another easier, faster
method.
So today (12th June 2009) I decided to prepare
this dish and serve it with Boil
Corn.
Ingredients
1 pack of macaroni
2 handful of shredded cheese (my preferred choice of cheese is white
sharp cheddar cheese)
1/2 cup of milk
1 egg
Layered Method
Put a pot of water to boil, only add the macaroni when the water has
come to a boil. When the macaroni has cooked, turn off the stove and
drain out the water.
Put on your oven and allow it to hot. In a baking
dish put a layer of macaroni and then a layer of grated cheese. Repeat
this step until you have used up all the macaroni.
In a separate bowl, mix the egg, milk and
seasoning. You could use home
made seasoning or seasoning bought from your grocery. Mix all
the ingredients together and pour this mixture over the layered
macaroni and cheese. Add some more shredded cheese on top. For a
variety, you can then add some bread crumbs.
Put the macaroni pie in the oven to cook. It may
take about 30 minutes to get golden brown on the top. I like to see the
sides of the pie get brown as well.
Easier Method
Put a pot of water to boil. Add the macaroni only when the water is
boiling. When the macaroni has cooked, turn off the stove and drain out
the water. Add cheese, seasoning, salt, egg and milk and mix everything
together. Pour out mixture into a baking dish. Layer the top with some
grated cheese. Put the dish in oven for the macaroni pie to bake.

This is the type macaroni that my mother uses to make Macaroni
Pie. It is like a treat for me when I see it in the grocery,
here in the BVI, so I purchased three boxes! It will be a while again
before I see it in the grocery stores. When my mother finished baking
this pie, I would pick of the most crispiest piece of macaroni! I still
do!!!!
