Kurma

Kurma is an Indian delicacy that is made and sold commercially in Trinidad and Tobago. It is also served at many Indian family functions.

2 1/2 lbs flour
1 lb of butter
1 tsp grated Ginger
milk to knead
4 cups granulated sugar
1 cup water

Rub butter into flour until crumbly
Mix in grated ginger
Add milk to form a dough
Roll out to approx. 1/2" thickness and cut into strips of about 1" in length.

Deep fry until crisp and golden brown
Combine sugar and water and boil until thickened (until it spins a thread)
Pour syrup over kurma, turning continuously to coat evenly and until syrup crystalizes.
