In the British Virgin Islands, Johnny Cakes are considered to be a type of fry bread, made frying pan instead of baked.

Ingredients
2 cups of flour
2 tablespoon baking powder
1/2 teaspoon salt
2 tablespoon butter
water
vegetable oil

Method
Sift flour, baking powder and salt into a bowl. Cut in the butter. Slowly add enough cold water to make a soft pliable dough. Knead gently until smooth. Cover and set aside for 30 minutes. Shape into balls, about the size of a golf ball, then flatten in the palm of your hand.

Heat enough oil to cover half the dough. Brown on both sides. Drain on paper towels. Best served hot but can be enjoyed cold.
