Ingredients
2 cups of rice 1 can of pigeon peas 1 1/2 cups of coconut milk 1 large sliced tomato 1 teaspoon peppersauce 2 cups of clean devained shrimp Method Pour some water (6 cups) into a pot and place on your stove burner. Add the rice, coconut milk and the pigeon peas. Season the rice with some salt, black pepper and pepper sauce if you like your food spicy. When the rice is almost cooked, add the shrimp (putting the shrimp into the pot too early will result in the shrimp being rubbery). The rice should be ready in about 20 minutes. Done!!! I like to enjoy this meal more when its hot. Serve with a fresh salad. My husband likes this dish served with a few slices of tomatoes. One morning I was making a shrimp dish and was I was taking the packet of shrimp out of the refridgerator, I noticed that it was busted open as if a rat had bitten the pack and stole some shrimp. Well it was a rat alright - my husband!!! He loves to eat raw shimp, sometimes when I am seasoning them, he would pass by and pick out a few from the bowl and eat them!
