Adding baby spinach is a great way to cook rice.
As a young child and even as a young adult, I never really liked spinach. It is only a few years ago I went to a Thanksgiving Party at a friends home and they prepared this salad with feta cheese, red onions and some green bush. The salad was great and I inquired what the green bush was and they informed me that it was Baby Spinach. The name of the salad was Spinach Salad.
I now make this salad at home and my family enjoys it. I eventually came up with the idea to create this dish – Spinach Rice. It is quite simple and of course nutritious.
2 cups rice
2 cups baby spinach
1 diced medium onion
3 cups chick/veggie stock
Add the diced onion and let that saute for a 3 minutes. Add the rice and stir in with the sauteed onions. Add the chicken stock. Let the rice cook. When the rice has almost cooked, add the spinach and mix in with the rice. Cover the pot and lower the fire under the pot. Allow all the water to dry down. For extra nutrition, you can add grated carrots or pumpkin the same time the spinach is being added. Enjoy!!!!

I just had to share this tip with my visitors. I enjoy Saltfish Spinach Rice. It is quite easy to prepare. All is needed in addition to the Spinach and Rice, is Saltfish.
For this recipe I boil the rice (2 cups first and set aside when cooked. Desalt the saltfish by putting the saltfish in a pot of water and allowing the water to boil. When the water has come to a boil, throw out the water and add more water to the pot. Allow the water to boil. Repeat these steps four times. When that is done, allow the saltfish to cool. Dice one medium onion and put in a hot pot of olive oil (2 tablespoons).
Shred the saltfish into small pieces. Allow the onions to saute for a few minutes, add the spinach, saltfish, some pepper sauce and let these ingredients saute for about five minutes. Gradually mix in the cooked rice and mix everything together. That is it. Yum!!!
Saltfish Spinach Rice will go great with Fried Plantain.
