This is a real ole skool Trini dish. My mother makes Pong Plantain and it entails the use of a Motar and Pestle.
A Mortar and Pestle is a tool used to grind food in the kitchen. The Pestle is a heavy stick, made from porcelain, wood or other materials, whose rounded end is used for pounding and grinding. The Mortar is a bowl, which can be made from porcelain, wood, carved stone or other materials. The substance is ground between the pestle and the mortar by rubbing or pounding the substance with the pestle against the wall of the mortar.
2 medium sized green plantains
1 leveled tbsp of butter
2 cups of boiling water
Peel plantains and place in boiling water. Let plantains cook until soft (stick a fork in plantains to test). Once cooked, place plantains in mortar while hot one at a time, and smash until smooth. While smashing the plantains put butter to help make the plantain soft and easier to work with.
When done, take smashed plantains out of the mortar and roll into a ball. Slice and serve with Callaloo or Stewed Fried Fish or Stewed Chicken if you like.
