How To Make A Caribbean Corn Pie

Today I have a winner recipe that I want to share with  you – Caribbean Corn Pie it is so good!  My daughter made this dish some time ago and finally sent me the recipe.

2 cans of whole corn, 3 small cans cream style corn, 1 grated carrot, 1 finely chopped onion, 4 sticks of chive finely chopped, 4 garlic cloves finely chopped, 4 seasoning peppers (yellow and red) finely chopped, 1/2 cup of parsley finely chopped, 1 cup of milk, 1 teaspoon Salt, Black pepper, 1 3/4 cups Cheese (any type), 1 cup corn meal (any brand)

Put a deep pot on the stove, allow it to hot then add 2 tablespoons of oil. Add the onions, chive, parsley, garlic and the seasoning peppers (these will give this dish lovely colour) and allow them to sauté for a few minutes.

Add the carrots, whole corn, cream style corn, salt and some black pepper.  Mix up everything together.

Add the milk and cheese and mix in well. Turn off the stove at this point.  Add the corn meal and mix well.  The corn meal will give the pie a nice stiff consistency.

Turn on the stove and allow some more of the liquid to dry up a bit for about 3-5 minutes.  Transfer the mixture to a baking dish.  Set oven to 350 degrees.

Sprinkle a little bit of grated cheese on the top of the pie as a final touch.  Bake for 20-30 minutes.

Note:  you can experiment with your favorite seasonings and tweet to your liking.

This pie is a bit similar to a recipe that my mom made when I was growing up. We called it Potato Pie and it is made with cream style corn and potato.
