In this blog post, I will demonstrate how to make a green fig and saltfish pie. My husband is Vincentian and they call green fig, green banana.
8 green figs
grated cheese (you can use any cheese that you like)
1/2 cup milk
dried basil leaves
1 sliced tomato
1 sliced onion
1 sweet pepper sliced
Remove as much salt from the saltfish as you can. You can put the saltfish in a pot and put the pot on the stove and allow the saltfish to boil for about 10 minutes. Throw out the water, fill the pot again with water and boil again. Repeat the process about four times. Sometimes the saltfish can be really salty. When you are satisfied that you have removed most of the salt, allow the saltfish to cool, then shred.
Wash the green figs and cut off the top and bottom of each green fig. Place the cleaned green figs in a pot filled with water. Place the pot on the stove and allow the water to boil and the green figs to cook. This should take about 25 minutes. Note that before the green figs were cooked the skin color was a bright green. After they are coked the skin is like a moss green.
After the green figs has cooled, peel off the skin. The skin of some of the figs would have already burst open. This will be a very easy process.
My husband prefers that the skin of the green figs be peel first before cooking. To me this is a lengthy process and I dread doing it. Cooking the green figs with the skin is so much easier and it retains the vitamins and nutrition of the figs.
After peeling the green figs, place them in a mixing bowl and thinly slice. Use a potato masher and mash the green figs. Season with the garlic, ginger and dry basil leaves. Mix everything together well.
Grease a baking dish and line the dish with half of the seasoned mashed green figs. Put a layer of the shredded saltfish, layer of tomatoes, layer of onion, layer of green peppers and finally a layer of the cheese. Repeat this process until all the ingredients have been used up.
Place the baking dish in the oven (set at 360 degrees) and allow the green fig pie to bake for 60 minutes.
