In Trinidad and Tobago, Ginger Beer is a beverage that is traditionally made during the Christmas season. Personally I do not like Ginger Beer because of the burning sensation that I experience in my throat when I swallow the drink.
My son enjoys a good glass of Ginger Beer so sometimes when I think I have enough in the fridge to offer my guests when they visit us, most times there is hardly any left.
1 gallon water
1 lb ginger
3 cups sugar
7 whole cloves
1 teaspoon cinnamon
Garnish: Pinch nutmeg
Bring water to boil. Peel and pound ginger until thoroughly crushed, add to boiling water. Cook over low heat for 30 minutes. Add lime and sugar; stir to dissolve. Cover and allow to cool. Add cloves and cinnamon. Pour into large container, cover and leave at room temperature for two days. Strain bottle and refrigerate.
Serve chilled with a sprinkle of nutmeg on top.
