Fried Saltfish and
Ground Provision
Fried Saltfish and Provision is a very simple dish
that I remember my mother preparing with left over Ground Provision.
Ingredients

green fig
saltfish
1 diced onion
dasheen
(you can use any Ground Provision that you like)
Method
Put the saltfish in a pot of water and put the pot on the stove. Allow
the water to boil, after 5 minutes, throw out the water and fill the
pot with water again and allow to boil. Repeat this step three times.
This is to wash out as much salt from the saltfish as possible.
Peel the provision, cut them into medium squares
(the provision cooks faster when they are cut into smaller pieces) and
place in a pot of water. Put this pot on the stove and allow the
provision to cook. After about 15 minutes, use a fork to pierce the
provision check to see if they are cook. If the fork goes easily
through the provision easily, it is cooked.
Clean (remove the bones - to avoid this you can
purchase some boneless saltfish)and shred the saltfish into smaller
pieces. Put a sauce pot on the stove to hot and add some olive or
coconut oil. Add the diced onion and allow the onion to saute for about
three minutes. Add the shredded saltfish. Add some pepper sauce
(optional) and oregano (I like oregano). Let the saltfish fry.
Add the provision and mix everything together.
