Fried Plantain

We normally eat fried plantain for breakfast. My husband eats it with bread, at first I was apalled at the idea but I have grown to enjoy the combination. Here in the BVI most restaurants serve Fried Plantains as a side dish with their regular local meals. The plantain must be very ripe in order to enjoy it fried. My daughter enjoys it this way

Ingredients
2 ripe plantains
olive oil

Method
Peel the plantain and slice them in thin horizontal slices. Put a frying pan on the stove to hot, add the olive oil. Gently place the sliced plantain into the frying pan. Lower the fire, under the pot, to medium. Allow each side of each plantain to get golden brown. Remove the fried plantain from pan and place in a plate. Ensure that you put a piece of paper towel on the plate before putting the fried plantain on the plate. The paper towel absorbs the excess oil.
