Fried Ochro

In Trinidad and Tobago, Fried Ochro is a traditional Indian dish that is served mainly for breakfast or dinner.

Ingredients
20 ochros
1 large onion (chopped)
2 cloves garlic (chopped)
2 pimento peppers (chopped)
1 tbsp vegetable oil
1/2 hot pepper (according to taste and chopped)
Salt to taste

Method
Wash and cut up ochro thinly. Heat oil in saucepan and add garlic, onion, pimento peppers and hot pepper and allow to saute for about 1 minute.

Fried Ochro served with Sadha Roti

Add ochro and salt, mix all ingredients together thoroughly. Cover the pot and allow to steam under low heat for about 10 minutes. Keep turning occasionally.

When ochro is cooked, remove cover and allow frying for another 10 minutes or so. At this point you need to turn regularly Serve with Sadha Roti or with Dhal and rice for lunch.
