Ingredients
1 bag of channa aka chick peas 2 cups of oil 1 teaspoon Salt 1/2 teaspoon black pepper or peppe sauce 3 garlic cloves Method Remove the channa from the water. Place a clean kitchen towel in another bowl. Thoroughly rince the channa and place in the towel layered bowl. Wrap the towel around the channa and allow the excess water to drain out. Put a deep pot on the stove to hot, add about one cup of oil to the pot. Allow the oil to hot. Carefully add the channa to the hot oil (there may still be some moisture in the channa) and allow the channa to fry. They will become golden brown. Use a metal strainer to remove the fried channa from the pot, and place in an aluminium bowl or Pyrex dish. Add salt, pepper and grated garlic. Mix everything together. When the Fried Channa is cool, put them in a bottle. The bottle Fried Channa can be left at room temperature without spoiling. In my trip to Trinidad in 2011 (I stayed for a month), my mother had some bottled Fried Channa on the counter and each time I passed by I would have some. And each time, the Fried Channa was crispy not to mention delicious and very addictive!
