Dumplings
Pour the flour into a mixing bowl. Gradually pour water into the bowl and mix in (with a spoon) with the flour and until
almost all the flour has been mixed in.
You may now have to use your hands to mix in all the flour which would now be dough.
Leave the dough to 'rest' for about three (3) minutes.
Separate dough into small pieces and roll each piece into medium size balls.
Fill a pot with water and place the pot of the stove. Allow the water to boil. While the water is heating up to a boil,
flatten each flour ball into a circle about 1/4 inch thick.
Put each ball in the palm of one hand and use the ball of the other hand to flatten the balls.
Use your finger tips to flatten out the balls more.
Place the flatten balls into the pot of boiling water and allow to cook for ten (10) minutes.
COCONUT DUMPLINGS!
To put a little twist to your dumplings, you can add the husk of the coconut and coconut milk.
My husband and his friends would have occasional get togethers and cook on the beach. They would make what they
call a goat water. It is really a soup made with goat meat and of course they would add these coconut dumplings.
Use a dried coconut, dig out the jelly which would be hard and white. Cut up into small pieces and place
into blender. Add some water to the blender and blend the hard jelly as fine as possible.
Add all the contents of the blender to the bowl of flour. Mix together and add water if needed. Follow
the method listed above for the regular dumplings. I think you would really enjoy these dumplings!!
Another type of dumplings that I make is CORN MEAL DUMPLINGS.
In a mixing bowl add one cup of regular flour and one of corn meal. Mix the dry ingredients well together.
For added flavor, add some salt and garlic powder.
Gradually add some water and mix. The dry ingredients will begin to mend together. You can use your hands to complete
the process. The result would be a nice ball of corn meal/flour dough. NOTE: I mix the flour with the corn meal because
the corn meal tend to be a bit too hard for my liking.
Separate the dough in to small pieces and roll them into cyclinder like shapes. You can make any shape
you like - circular or oval. Put a pot of water on the stove to boil. Only add the dumplings when the water
has come to a boil. Allow to cook for about fifteen minutes and then turn of the stove.
CASSAVA DUMPLINGS!
I recently learned about cassava dumplings on my visit to my home town (Trinidad) in June 2011. My mother and I were preparing a soup and we had some cassava to use up so my mom decided to make some cassava dumplings. This is the first time she prepared this for me. It is more work but they are really good.
The ingredients are flour, cassava. and salt.
First the cassava has to be peeled then grated. Personally I have problems peeling cassava. So I prepared this video that may assist anyone who has the same problem. It would be a pleasure to read your comments. Use the box below.
Add some salt to the grated cassava (the amount of salt depends on the amount of cassava that was grated). Add some water and mix together until the mixture is formed into a dough. Allow the dough to rest for about ten minutes. Roll the dough into a cylinder shape and cut into little squares as seen in the picture below.
