Curry Oildown

The only way I knew how to cook breadfruit was in this style Oildown. We would put the breadfruit to boil with coconut milk and maybe some pigtail if you are not vegetarian.

One of my co workers gave me this recipe the only difference to our regular Oildown is that they add curry powder.

Ingredients
1 breadfruit
1 can coconut milk
1 tablspoon curry powder
1 sliced onion
2 garlic cloves grated

Method
Cut the breadfruit in half and then cut each half into half. Now cut off the skin. This is how I do it, it is much easier for me to handle.

Cut the breadfruit in to slim slices and place into a deep pot. Add the coconut milk. Add the curry powder to two cups of water and stir well. Add the curry water to the pot with the breadfruit and coconut milk. Add salt, pepper sauce and of course some blended herbs

Add the sliced onions and grated garlic. I used some garlic powder but you know what, don't let anyone fool you, nothing can replace the aroma and flavor you get with the natural herb!

Allow the breadfruit to cook and the sauce to simmer. That's it! When I last prepared this dish, I served it with some boil corn.
