Ingredients
conch 1 diced onion 1/2 can coconut milk 1 finely grated garlic 1 tablespoon curry powder chive 1/2 teaspoon pepper sauce (optional) Method Now eventhough the conch was boiling for an hour, it was still a bit chewy so I had to pressurize a bit. So put the conch in a pressure pot and allow it to pressurize for about 25 minutes. Add the coconut milk, onion, garlic, curry powder, salt and pepper sauce. Cut about 2 inches of the green part of the chive, thinly slice them and add to the pot. Allow the conch to absorb all the seasonings and the sauce to simmer and thicken. Serve with your favorite rice. In my picture I served my curry conch with some multi grain brown rice.
