Curry Channa aka Chick Peas

It has been a long time since I have eaten Curry Channa so last night, 22nd June 2009, this is what I had for dinner. It tasted great!!! .

In Trinidad and Tobago, we call this peas 'Channa' and internationally it is known as 'Chick Peas'. This peas is very nutritious. Another way it is done in Trinidad is fried (and eaten as a snack) but as I am trying to avoid fried food, I do not prepare it this way
Ingredients
2 tins channa
1 tablespoon curry powder
2 garlic cloves
1 cup coconut milk
1 tablespoon olive oil

Method
In a small mixing bowl, pour a half cup of water and add the curry powder. Mix in the powder into the water. In a cooking pot put the oil and allow to hot for 2 minutes. Add the garlic clove to flavor the oil. Do not let the garlic burn. Add the curry water and allow it to cook for a few minutes (about three minutes).

Add the channa aka chick peas and the coconut milk. Season with salt and black pepper and half teaspoon of pepper sauce. Allow the channa to cook and absorb all the flavor of the curry and seasonings. Taste for desired flavor. Let most of the water to dry down.

Curry Channa is normally served with white rice. If I have time I would do some

curry chicken and pumkin stew . Yum!!!
