Curry Pigeon Peas with Potato

Ingredients
1 lb fresh pigeon peas
2 medium potatoes, peeled and cut up in pieces
2 tbsp vegetable oil
1 medium onion (chopped)
2 clove garlic (chopped)
¼ hot pepper (chopped)
2 pimento peppers (chopped)
1 tbsp green seasoning
2 tbsp curry and ¼ tsp saffron powder
2 1/4 cup water
Salt to taste

Method
Heat Oil in heavy pot
Sauté onion, garlic, hot pepper and pimento peppers
Mix curry and saffron in ¼ cup water and add in pot allowing to fry for a minute
Add potatoes and peas, stir until curry is fully incorporated
Add 2 cups hot water and bring to a boil
Add green seasoning and salt
Cover and allow to cook under low heat
Taste for salt

Serve with roti
