Curried Bodie

Ingredients
1 bundle of Bodie aka Bora
1 teaspoon pepper sauce (optional)
1 sliced sliced medium onion
1 tablespoon of olive oil
1 tablespoon of curry powder

I am so excited to prepare this meal - Curried Bodie. I can not remember the last time that I cooked Bodie. Bodie (as this vegetable is called in Trinidad) is not sold very regular in the BVI groceries and on the odd occassion it is sold, it is quite expensive (in my opinion). A friend of mine from Guyana got me a lovely bunch of this vegetable and prepared this dish with it. This vegetable is called Bora in Guyana.

Method
Cut the bodie into small pieces. In a frying pan put some olive oil to hot and add the onion allowing it to saute for a few minutes.

Add the bodie, curry powder, salt and pepper sauce. Allow the curry powder and the bodie to cook well. This dish can be served without any meat or seafood but as you can see in my pictures I prepared it with some shrimp.

After the bodie was well cooked, I added the shrimp and allowed it to cook for about 5 minutes then I turned off the stove.

I served this dish with some white rice.
