Here is a quick, easy and delicious recipe for my vegan and vegetarian readers – Curried Lentil Peas. I never thought about currying my lentil peas until I saw the recipe a few days ago and thought that it is an absolute must that I share the recipe with my peps!
1/2 cup lentil peas
1 cup coconut milk
1 tablespoon of curry powder
2 tablespoon of a blend of chive, shadon beni and big leaf thyme (you can use any season you like)
garlic powder (or you can use 2 raw garlic cloves minced)
Put all the ingredients into a pot. Add 3 cups of water and cover the pot. Put the pot on the stove and allow the peas to cook. After about 25-30 minutes the peas should be nice and tender and ready to serve. Its that simple.
