Coconut Ice Cream

I made coconut ice cream over the weekend and everyone loved it.

Ingredients
Milk from 2 coconuts
4 tins evaporated milk (heavy cream)
4 tins condensed milk
1 cup sugar
2 tsp mix essence
2 drops of vanilla essence

Method
Mix all ingredients in mixing bowl
Pour mixture into can and place into ice cream maker
Pack one layer of ice into ice cream maker, one layer of salt until can is covered with ice as the last layer.
Allow ice cream maker to mix mixture until the maker comes to a stop or ice cream is frozen
Makes approximately 6 litres.
