Chicken and Macaroni
Chicken and Macaroni is another meal that I
remember my mother preparing for me as a child. It is not really a
Trini dish, I think it is just one of her creations.
Ingredients
1/2 box of macaroni
6 pieces of chicken of your choice
1 onion sliced
2 garlic cloves
1 chicken maggie cube
1 tablespoon browning
salt
black pepper
1 hot pepper
dry herbs - parsley
Method
The chicken has to be stewed so we will do it my short cut way, do not
worry it will come out just great! With this method, I don't use any
oil. Put the chicken in a pot of water and put the pot on the stove and
allow the chicken to cook. Add your seasonings, salt, black pepper and
pepper sauce, if you like your food spicy.
You can also add one medium diced onion and three
grated garlic cloves. The key ingredient here is a few drops of
browning that can be purchased in the grocery store. Be careful not to
add too much otherwise the stew would be too dark.
Allow the meat to cook and the sauce to dry down
and thicken. Remember to taste the stew. When the chicken has
thoroughly cooked, and the stew has begun to dry down, add the
macaroni, mix everything together and allow the macaroni to cook.
My mother also added diced potato to this dish but
now that I am older and keeping a close eye on the amount of
carbohydrates that I eat during each meal, I decided that the macaroni
is enough. In the event that you want to add the potato, add it while
the chicken is cooking.
You can be creative and add some vegetables like
green sweet peppers and carrots. The vegetables will make the meal more
nutritious as well as colorful.
