As a young child I remember my mom use to make a Chicken Potato Salad and pack it for me to take to school so I could enjoy during my lunch period.
4 potatoes, 2 celery sticks finely chopped, 1 1/2 cup cooked shredded boneless chicken, 1 can peas and carrot,
2 hard boiled eggs, 1 teaspoon garlic powder, 1 teaspoons yellow mustard, 3 tablespoons mayonnaise, 2 sticks of chive finely chopped, 3 tablespoons sweet relish, 1/4 teaspoon black pepper, 1/4 teaspoon salt
Peel the potatoes, dice them into medium squares. Place a pot of water on the stove and allow the water to boil. Put the diced potatoes in the pot with the boiling water and allow the potatoes to cook.
In the bowl with the mayonnaise, add the sweet relish, black pepper, salt, yellow mustard and mix everything together well.
Cut up the eggs into small pieces.
When the potatoes has cooked, pour out the hot water and transfer to a mixing bowl. Add the shredded chicken, peas and carrots, chive and celery. Mix all these ingredients together well.
After the above ingredients have been fully cooled add the mayonnaise mixture and the diced eggs. Mix well. Enjoy!
