Cheese Scones

I learned to make Cheese Scones when I attended High School. I made it frequently at home. My mom enjoyed the Cheese Scones alot and eventually learned the recipe. So much so, she made Cheese Scones at home more than I did. She would make them for parties and friends get together. I eventually forgot the recipe and always had to ask her how to make Cheese Scones.

Cheese Scones are great for breakfast or a light dinner with a cup of tea or your favorite beverage.

Ingredients
* 2 3/4 cups self rising flour
* 2 tsp baking powder
* 1 cup cheddar cheese grated
* 3/4 cup or more) chilled whole milk
* 2 large eggs (1 lightly beaten)
* 1 Tbs vegetable oil

Preparation
1. Preheat oven to 425°F. Line a large baking tray with baking parchment. Mix the dry ingredients in a large bowl. Stir in chives and cheese. Mix ¾ cup milk, 1 egg, oil in bowl and mix well. Gradually add milk mixture to the dry ingredients, stirring until the mixture comes together and adding more milk gradually if the dough is dry. Turn dough out onto lightly floured surface; knead the dough gently for one minute.

2. Roll out the dough to about 1-inch-thick. Cut out scones using a 2 1/2-inch-diameter cutter - taking care not to twist the cutter as this will cause the scones to twist and tear as they rise. Transfer the scones to the prepared sheet. Brush the top of scones (with a small paint brush specifically for cooking)liberally with milk and sprinkle with grated cheese.

3. Bake scones until golden brown on top, about 15-17 minutes. Transfer the scones to a wire rack for cooling.
