Callaloo Soup
My husband does not cook often but one evening he
gave me a surprise and cooked Callaloo Soup and boy
was it delicious!! He did a great job! Callalloo soup
is made from dasheen (a ground provision) leaves. Here in Tortola BVI (British Virgin Islands)
I unable to get this item. Sometimes when my husband's friends are
traveling to St. vincent, I would ask them to bring back some of this
bush for me.
Ingredients
1 bundle of dasheen bush
1 can pigeon peas
1 can coconut milk
1 cut up dasheen, tania, yam
1 sliced onion
salt
black pepper
1 piece of pumpkin
1 pack of sliced ochro
1 red hot pepper (optional)
2 chopped garlic cloves
Method
Cut up the Dasheen
Bush and place into a large pot. Add the ochro, pumpkin. Put
the pot on the stove and add about 8 cups of water. Now add the Coconut Milk, onion salt
and black pepper.
Allow the dasheen bush to cook for about 20 minutes. The seeds of the
ochro should be pink by now. This is how I know that the ochro is
cooked.
Cut up your Ground
Provision (you can use yam, tania [this is my huband's
favorite] or/and dasheen)and add to your pot. You can even add Dumplings to this dish, the
only difference is you would have to make the them into very small
balls and put them into the pot the same time you are putting the
provision.
Add the pigeon peas and hot pepper. Do not cover your pot if you are
using a hot pepper. The pepper will burst and the dish would be toooo
spicy.
