Breadfruit Balls
Ingredients
1 breadfruit
saltfish
1 medium onion
3 garlic cloves
celery
salt
black pepper
Method
Put some saltfish to boil in a pot of water. When the water has come to a boil, throw out the water, put more water in the pot and let
the water boil with the saltfish. Repeat this process about four times. This is to remove the excess salt from the saltfish.
Another method is to leave the saltfish soaking in a bowl of water overnight.
Throw out the water and shred the saltfish into small pieces.
Cut breadfruit in half and then cut each half in half. Peel the quarters. Cut out the seeded sections of the breadfruit.
Place the bread fruit in a deep pot with some water. Allow the water to boil and the breadfruit to cook.
While the breadfruit is cooking, peel the onion and cut into about four pieces. Place the cut onion into a food processor or blender.
Peel the garlic and put this into the food processor as well. Add some celery. Blend the herbs for a few seconds.
Add the shredded saltfish and blend for two seconds. Do not allow the mixture to get like a paste.
After about twenty five minutes the breadfruit should be cooked. Remove from water and place the breadfruit in a mixing bowl.
Use a potato masher to mash the breadfruit just like if you are mashing potatoes. Add the saltfish mixture to the mashed breadfruit.
Use a spoon to mix everything together. Add some salt and black pepper. If you like spicy food, add about a teaspoon of pepper sauce.
Put a deep medium pot on the stove, allow the pot to hot and add about a cup of olive oil.
Put a tablespoon of the breadfruit mixture in the palm of your hand and using both hands roll the mixture into a ball.
Gently place the ball into the pot of hot oil. Repeat this process until all the mixture is used up. As the breadfruit balls begin to
get golden brown, remove them from the pot and place them in a bowl layered with paper towel. The paper towel will absorb the excess oil.
Breadfruit balls are a really nice delight at a party or it can be served as a side dish.
