Boil Corn

In Trinidad and Tobago I can purchase fresh corn on the cob in the market
or supermarket. I enjoyed it boiled. First we would clean of the husk, break
them in half (optional) and then place them in a pot of water to boil. Add
salt and black pepper.

Here in the British Virgin Islands , where I presently live, fresh corn in unaccessible for us. If I do see any
in the grocery, they are quite expensive and I refuse to buy. What we do
get is the mini corn in a pack and they are sweet.

Originally I would boil them the same way as I
would when I was back home in Trinidad. But they do not retain the seasoning. What I do now is wrap each corn in a piece of foil. Fold the foil like a cup. Add salt and black pepper and put them in the oven to bake. Success!!!! They taste absolutely great!!!!

12th June 2009 UPDATE!!!
I found a even easier method - put the corn in a pryex dish that has a cover. Season the corn with salt and black pepper. Cover the dish and place in oven to cook. Thats it!! Can't easier than that.

I recently purchased some lovely fresh corn and they were reasonably priced. So I decided to boil some and roast some. I cleaned the corn my removing the outside leaves and then the corn hairs. I then put the cleaned corn in pot of water, add some salt and black pepper. Normally we would cover the corn with the green leaves of the corn. Gives the boil corn a natural flavor.

Cover the pot and all the corn to boil. Simple.
