Beef Pattie
Ingredients
Pastry:
3 cups of all purpose flour
1 teaspoon salt
1 tablespoon baking powder
2 1/2 teaspoons sugar
1/2 cup vegetable shortening
1/4 cup evaporated milk
6 tablespoons water
Filling:
2 tablespoons vegetable oil
1 lb lean ground beef
1/2 onion minced
2 crushed garlic cloves
1 diced green bell pepper
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 cup water
1/2 teaspoon hot sauce
olive oil for deep frying
Method
Put dry ingredients for pastry in a large bowl and cut in shortening until mixture resembles coarse crumbs. Combine milk and water and work into
dry ingredients to form a soft dough. Knead for five minutes. Cover with a dish towel and let rest for thirty minutes.
Meanwhile, heat the oil in a large frying pan, add ground beef, onion, garlic and green pepper. Cook until meat is no longer pink. Stir in thyme and salt.
Simmer for five minutes. Sprinkle with flour, cook for one minute. Add water and hot sauce. Stir and cook until thickened. Add more hot sauce if
desired. Transfer to bowl and cool.
Divide dough into eight portions, then roll into 8" circles. Put 1/2 cup meat filling in center and fold over into a 1/2 circle. Press edges
to seal, making an attractive scalloped edge. Make remaining 7 patties.
Heat three inches of olive oil at 370 degrees in a large heavy pan. Gently lower patties into the hot oil and cook on both sides until golden
brown. Drain on paper towels. Serve hot.
