Bajan Salad
This is a great and easy salad. I gave this salad its name Bajan Salad (this story is so funny) because one of my bajan co- workers
invited a few of us to his home for dinner and this salad was served. Since he did not give me a name for the salad, I just called it Bajan Salad!!!
Ingredients
2 cucumbers
2 medium size tomatoes
white sharp cheddar cheese
3 garlic cloves
salt
black pepper
Method
Peel the cucumbers, leaving some of the skin on, and cut into cubes. Cut the
tomates into cubes.
Grate the garlic on the smallest side of the grater. Cut up the cheese in to little squares.
Put vegetables in a mixing bowl, add the garlic, cheese, salt and black pepper.
Mix everything together. Serve.
Tip: Add the salt when this salad is being serviced. I notice that when the salt is added while it is being made,
by the time it is ready to be serviced, there is a lot of water in the bowl. Apparently the salt causes the tomatoes to secrete its juices.
