Aloo Pie

In Trinidad and Tobago, Aloo Pie is a another traditional Indian dish that is served mainly for breakfast or dinner. It can be served with different fillings such chicken, tuna, fish or Mango Chutney.

Ingredients
4 cups flour
1/2 tsp baking powder
1/2 tsp yeast
1/4 tsp salt
1/4 tsp sugar
Oil for frying

Method
Mix together all dry ingredients and knead with enough water to make soft dough. Leave to rise for about 45 minutes.




Ingredients for Potato Filling
4 large potatoes
1 onion
2 pimento peppers
1/4 hot pepper
1 blade chive
1 tsp geera
1 tbsp oil
Salt to taste

Method
Wash potatoes and cut in half. Boil with skin until tender Peel potatoes and mash. Chop up finely onion, pimento peppers, hot pepper and chive. In saucepan add oil and saute chopped ingredients. Add potato and mix thoroughly. Mix in geera and add salt to taste. Set aside to cool.

Aloo Pies served with Mango Chutney filling


Method for making Aloo Pies
Divide dough into 20 pieces and roll into small balls. Leave to rest for another 10 minutes. Roll out each ball thinly and spread about one and half tablespoon of potato filling in centre. Fold over and press ends together with a fork.

In a deep sauce pan, put on the stove to hot and add enough oil for deep frying. When the oil is nice and hot, gently place each pie in the pot and allow them too cook until golden brown.
